Stubb's is probably now more well known for live music and the bottled sauce at your local Kroger, and there's a reason. The ribs here are large and meaty, but they're also tough, to salty, devoid of smoke, and poorly rendered. The brisket was a little better with a decent crust that held some smoke flavor, but overall it was dry, and a bit roast-beefy.

The pulled pork at Stubbs is the best I've had in Central Texas.

DISCLAIMER:

Each joint is judged on the essence of Texas 'cue...sliced brisket and pork ribs. Sausage is only considered if house made. Sauce is good, but good meat needs no adornment to satisfy. Each review can only be based on specific cuts of meat on that particular day. Finally, if the place fries up catfish or serves a caesar salad, then chances are they aren't paying enough attention to the pits, so we mostly steered clear.
